100% Pasture Fed Organic Lamb from native breeds such as Wiltshire Horn and Shetland.
A high end mini roasting joint. Exquisitely soft meat under a fat cap across the ribs bones. Start skin side down in the pan to crisp up and render the fat, then transfer to a medium over for 10-12 mins. Best served pink.
