Organic Shoulder of Pork
Organic, free range and native breed pork from Tamworth and Saddleback pigs.
Boned and rolled shoulder. Beautifully marbled throughout and with the perfect muscle to fat ratio. Slow roast at 150 degrees.
For proper crackling, cut off the skin, scrape out any fat, sprinkle with salt and place between two baking sheets in the oven for 20-30mins.
