Organic, free range and native breed pork Saddleback pigs.

Boned and rolled shoulder. Beautifully marbled throughout and with the perfect muscle to fat ratio. Slow roast at 150 degrees.

To finish the crackling, cut off the skin, scrape off the underside fat and place between two baking sheets in a hot oven for 20-30mins.
