Nutrient packed organic liver from our dairy calves who live with the cows, drinking milk naturally and grazing organic pastures. Because the animals have been out grazing, the forage and roughage in their diet means that the liver is never going to be as pale and spongy as it would be from a calf that has been reared indoors, without exercise, and fed powdered milk. Still very tender but with a little bite. Cook to medium rare, baste with butter and fresh sage. Delivered frozen.
